Hope you are all well. It’s Sunday, which means time for a new post! I recently made a rocky road which I have previously made for Easter and based it on this recipe. I obviously took away the crème and mini eggs but apart from that, everything else is the same.
I am a massive fan of baking and especially treats that can be done in less than 30 minutes, so this is a perfect recipe for those days you do not have time to go all out and bake a cake but still want to satisfy your sweet tooth. So follow the recipe and be on your way to a scrumptious rocky road perfect for all occasions!
150g unsalted butter
250g dark chocolate, chopped
150g milk chocolate, chopped
4 tbsp. Golden syrup.
180g mini marshmallows
150g digestive biscuits, crushed into chunks
150g white chocolate, chopped
Melt your unsalted butter over a relatively low heat, when it is half melted add in your dark and milk chocolate and golden syrup & melt over a low heat. Be careful with this as you do not want your chocolate to burn and separate. Once your chocolate is fully melted,mix in your crushed digestive biscuits (bigger chunks are better), and mini marshmallows until the mixture is well coated. Leave aside to cool for 10 minutes.
Line a 20cm x 20cm baking tin and press your mixture into it firmly. Melt your white chocolate and drizzle over the rocky road mixture. Leave in the fridge for a couple of hours until it sets completely. However, I would recommend taking your rocky road out of the fridge about half an hour before eating because it tastes much, much better when at room temperature.
